Ingredients
8 cups popped popcorn (about 1/2 cup unpopped kernels)
1 cup mixed nuts (e.g., almonds, pecans, cashews)
1 cup packed brown sugar
1/2 cup unsalted butter
1/4 cup light corn syrup
1/2 teaspoon salt
1/4 teaspoon baking soda
1 teaspoon vanilla extract
Instructions
Preheat oven to 250°F (120°C). Line a large baking sheet with parchment paper or a silicone mat.
Place popped popcorn and nuts in a large bowl; set aside.
In a medium saucepan over medium heat, combine brown sugar, butter, corn syrup, and salt. Stir until butter is melted and sugar is dissolved.
Bring mixture to a boil, then let boil without stirring for 4 minutes. Remove from heat.
Stir in baking soda and vanilla extract (mixture will foam). Immediately pour over popcorn and nuts, stirring gently to coat.
Spread mixture onto prepared baking sheet in an even layer.
Bake for 15 minutes, stirring halfway through. Let cool completely on baking sheet, then break into pieces.
Store in an airtight container at room temperature for up to 1 week.
Tips
