  3. In the same saucepan, combine 2 cups sugar, water, and corn syrup. Bring to a boil, stirring until sugar dissolves. Add the drained peel strips, reduce heat to low, and simmer gently for 45-50 minutes, until peels are translucent and tender.
  4. Using a slotted spoon, transfer the candied peels to a wire rack set over a baking sheet. Let them dry for about 1 hour (they should be tacky, not wet).
  5. Place the remaining 1/2 cup sugar in a shallow bowl. Toss the dried peels in the sugar to coat evenly. Let them dry on the rack for another 2-4 hours until fully set.
  6. Store in an airtight container at room temperature for up to 2 weeks.
