1 lb (450g) fresh or thawed squid, cleaned and cut into rings
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper (optional)
2 cups vegetable or canola oil, for frying
Lemon wedges, for serving
Marinara sauce, for dipping
Instructions
Pat squid rings dry with paper towels. In a shallow bowl, whisk together flour, salt, pepper, paprika, and cayenne.
Heat oil in a deep skillet or pot to 375°F (190°C). Line a plate with paper towels.
Working in batches, toss squid rings in the flour mixture to coat evenly. Shake off excess.
Fry squid in hot oil for 1-2 minutes until golden and crispy. Do not overcrowd.
Transfer fried calamari to paper towel-lined plate. Season immediately with a pinch of salt.
Serve hot with lemon wedges and marinara sauce.
