Ingredients
1 cup unsalted butter
1 cup packed light brown sugar
1/4 cup light corn syrup
1/4 teaspoon salt
1 teaspoon vanilla extract
2 cups powdered sugar, sifted
Instructions
Line a baking sheet with parchment paper or a silicone mat.
In a medium saucepan, melt the butter over medium heat. Add the brown sugar, corn syrup, and salt. Stir until smooth.
Bring the mixture to a boil, then reduce heat to medium-low and simmer, stirring occasionally, for 5 minutes. Remove from heat.
Stir in the vanilla extract. Gradually add the powdered sugar, stirring until fully incorporated and the mixture is smooth.
Drop tablespoonfuls of the mixture onto the prepared baking sheet, spacing them about 2 inches apart.
Let the discs cool completely at room temperature until firm, about 30 minutes. Store in an airtight container.
Tips
For a softer texture, cook the mixture for 4 minutes instead of 5.
Store between layers of wax paper to prevent sticking.
These discs can be stored at room temperature for up to 2 weeks.
