Ingredients
8 oz (225g) wide egg noodles
4 tbsp (56g) unsalted butter, cut into pieces
1/2 cup (50g) freshly grated Parmesan cheese
1/4 tsp salt, plus more for pasta water
1/4 tsp freshly ground black pepper
2 tbsp chopped fresh parsley (optional)
Instructions
Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package directions until al dente, about 6-8 minutes.
Reserve 1/2 cup of the pasta cooking water, then drain the noodles well.
Return the empty pot to low heat and add the butter. Once melted, add the drained noodles and toss to coat.
Add the Parmesan, salt, and pepper, and toss again, adding a splash of reserved pasta water if needed to create a light sauce.
Serve immediately, garnished with parsley if desired.
Tips
For best flavor, use freshly grated Parmesan from a block, not pre-shredded.
Can be served as a side dish with chicken, fish, or vegetables.
