Ingredients
1 lb ground beef
1 tbsp vegetable oil
1 small onion, diced
2 cloves garlic, minced
1 packet (1 oz) taco seasoning
1/2 cup water
1 cup cooked white rice
1 can (15 oz) black beans, drained and rinsed
4 large flour tortillas (10-inch)
1 cup shredded cheddar cheese
1/2 cup sour cream
1/2 cup salsa
Instructions
Heat oil in a large skillet over medium-high heat. Add onion and garlic, cook until softened, about 2 minutes.
Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat.
Stir in taco seasoning and water. Simmer until thickened, about 5 minutes.
In a small bowl, mix cooked rice and black beans.
Warm tortillas in a dry skillet or microwave for about 15 seconds each to make pliable.
Lay a tortilla flat. Spoon about 1/4 of the beef mixture down the center, then top with 1/4 of the rice-bean mixture, 1/4 cup cheese, 2 tablespoons sour cream, and 2 tablespoons salsa.
Fold the sides of the tortilla over the filling, then roll up tightly from the bottom, tucking in the sides as you go.
Repeat with remaining tortillas and filling.
Serve immediately, or for a crispy finish, place burritos seam-side down in a hot skillet and cook for 2 minutes per side until golden.
Tips
For a vegetarian version, substitute beef with extra beans or a plant-based meat alternative.
