Ingredients
1 lb ground beef
1 packet taco seasoning
1/2 cup water
1 can (16 oz) refried beans
1 cup cooked rice
4 large flour tortillas (10-inch)
1 cup shredded cheddar cheese
1/2 cup sour cream
1/2 cup guacamole
1 can (10 oz) red enchilada sauce
1/4 cup diced tomatoes (optional)
2 green onions, sliced (optional)
Instructions
Preheat oven to 375°F (190°C).
In a skillet over medium heat, cook ground beef until browned; drain fat. Add taco seasoning and water, simmer for 5 minutes.
Warm refried beans in a small saucepan or microwave.
Lay tortillas flat. Divide rice, refried beans, seasoned beef, sour cream, guacamole, and a sprinkle of cheese among the tortillas.
Fold in the sides, then roll up tightly from the bottom. Place seam-side down in a greased 9x13 baking dish.
Pour enchilada sauce over the burritos and top with remaining cheese.
Bake for 20-25 minutes until heated through and cheese is melted.
Garnish with diced tomatoes and green onions if desired.
Tips
To prevent soggy burritos, warm tortillas before filling.
Substitute chicken or tofu for beef if preferred.
Store leftovers in an airtight container in the fridge for up to 3 days.
