A homemade version of the classic fast-food veggie burger, featuring a savory bean patty with vegetables and spices, topped with lettuce, tomato, and mayo on a sesame seed bun.

Ingredients
1 can (15 oz) black beans, drained and rinsed
1/2 cup breadcrumbs
1/4 cup finely chopped onion
1/4 cup finely chopped red bell pepper
1 clove garlic, minced
1 large egg, beaten
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons vegetable oil
4 sesame seed burger buns
4 lettuce leaves
4 slices tomato
4 tablespoons mayonnaise
Instructions
In a large bowl, mash black beans with a fork until mostly smooth but with some chunks.
Add breadcrumbs, onion, bell pepper, garlic, egg, cumin, salt, and pepper. Mix well.
Divide mixture into 4 equal portions and shape into patties, about 1/2 inch thick.
Heat oil in a large skillet over medium heat. Cook patties for 4-5 minutes per side, until golden brown and heated through.
Toast burger buns lightly in the skillet or toaster.
Assemble burgers: spread mayonnaise on bottom bun, add lettuce, tomato slice, patty, and top bun.
Tips
For a vegan version, substitute egg with 1 tablespoon flaxseed meal mixed with 3 tablespoons water.
Patties can be baked at 375°F for 15 minutes, flipping halfway, instead of frying.
Store leftover patties in the refrigerator for up to 3 days or freeze for up to 3 months.
