Ingredients
1 lb ground beef (80/20)
1/2 cup panko breadcrumbs
1/4 cup milk
1/4 cup finely chopped onion
1 large egg
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup hot sauce (such as Frank's RedHot)
2 tablespoons unsalted butter
1 tablespoon honey
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, combine ground beef, panko, milk, onion, egg, garlic powder, salt, and pepper. Mix gently until just combined.
Form mixture into 1-inch meatballs (about 24) and place on prepared baking sheet.
Bake for 15-18 minutes, until cooked through and lightly browned.
While meatballs bake, make the sauce: In a small saucepan over low heat, combine hot sauce, butter, and honey. Stir until butter is melted and sauce is smooth.
Transfer baked meatballs to a large bowl, pour sauce over them, and toss gently to coat.
Serve immediately with ranch or blue cheese dressing and celery sticks.
Tips
For extra crispiness, broil meatballs for 2 minutes after baking.
Make ahead: Prepare meatballs and sauce separately; reheat and toss before serving.
Substitute ground turkey or chicken for a lighter version.
