Ingredients
4 ripe Roma tomatoes, diced
1/4 cup fresh basil leaves, chopped
2 cloves garlic, minced
2 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon black pepper
8 slices Italian baguette or ciabatta, 1/2-inch thick
1 clove garlic, peeled (for rubbing bread)
Instructions
In a medium bowl, combine diced tomatoes, basil, minced garlic, olive oil, balsamic vinegar, salt, and pepper. Let sit at room temperature for 10 minutes to meld flavors.
Preheat oven broiler or grill pan to high heat. Arrange bread slices on a baking sheet. Broil or grill until golden, about 1-2 minutes per side.
Remove bread from oven and immediately rub one side of each slice with the peeled garlic clove.
Spoon tomato mixture onto the garlic-rubbed side of each bread slice. Serve immediately.
Tips
For best flavor, use ripe, in-season tomatoes.
