Ingredients
4 cups broccoli stems and florets, finely shredded
1 cup shredded carrots
1/2 cup mayonnaise
2 tablespoons apple cider vinegar
1 tablespoon sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup sunflower seeds or sliced almonds
1/4 cup dried cranberries or raisins
Instructions
Shred the broccoli stems and florets using a food processor with a shredding disc or a box grater. Place in a large bowl.
Add shredded carrots to the bowl.
In a small bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and pepper until smooth.
Pour dressing over the broccoli and carrots, and toss to coat evenly.
Fold in sunflower seeds and dried cranberries.
Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
