Ingredients
1 tbsp unsalted butter
1 small onion, diced
2 cloves garlic, minced
4 cups broccoli florets (about 1 large head)
2 cups low-sodium chicken or vegetable broth
1 cup whole milk
1 cup shredded smoked Gouda cheese
1/4 tsp salt
1/8 tsp black pepper
1/4 cup heavy cream (optional, for extra richness)
Instructions
In a large pot, melt butter over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook 1 minute more.
Add broccoli and broth. Bring to a boil, then reduce heat, cover, and simmer until broccoli is tender, about 10-12 minutes.
Use an immersion blender to puree the soup until smooth. (Alternatively, let cool slightly and blend in a blender in batches.)
Return pot to low heat. Stir in milk, Gouda, salt, and pepper. Cook, stirring, until cheese is melted and soup is heated through, about 3-5 minutes. Do not boil.
If using, stir in heavy cream for extra richness. Adjust seasoning to taste. Serve hot.

For a smoother texture, peel the broccoli stems before chopping.
