Ingredients
1 lb (450g) pork sausage meat
1 small onion, finely chopped
1 garlic clove, minced
1 teaspoon dried sage
1/2 teaspoon salt
1/4 teaspoon black pepper
1 sheet (about 10x10 inches) puff pastry, thawed
1 egg, beaten (for egg wash)
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a bowl, combine sausage meat, onion, garlic, sage, salt, and pepper. Mix well.
On a lightly floured surface, roll out puff pastry to a 10x12 inch rectangle. Cut lengthwise into two 5x12 inch strips.
Divide sausage mixture in half. Shape each half into a log along the center of each pastry strip.
Brush one long edge of each pastry strip with beaten egg. Fold the other edge over the filling, pressing to seal. Crimp edges with a fork.
Cut each log into 4 equal pieces (about 3 inches each). Place seam-side down on prepared baking sheet.
Brush tops with remaining beaten egg. Cut small slits on top for steam vents.
Bake for 20-25 minutes until golden brown and cooked through. Let cool slightly before serving.
Tips
Can be made ahead and reheated in a 350°F oven for 10 minutes.
Freeze unbaked rolls on a tray, then transfer to a bag. Bake from frozen, adding 5 minutes.
Substitute sausage meat with a mix of ground pork and herbs if desired.
