Ingredients
1 lb ground pork
1 tsp salt
1/2 tsp black pepper
1 tsp dried sage
1/2 tsp dried thyme
1/2 tsp dried marjoram
1/4 tsp red pepper flakes (optional)
1 tbsp brown sugar
1 tbsp maple syrup
1 tbsp cold water
Instructions
In a large bowl, combine ground pork, salt, pepper, sage, thyme, marjoram, red pepper flakes, brown sugar, maple syrup, and cold water. Mix gently until just combined.
Cover and refrigerate for at least 30 minutes (or overnight) to allow flavors to meld.
Divide the mixture into 12 equal portions. Shape each portion into a small link, about 3 inches long.
Heat a large skillet over medium heat. Add the sausage links in a single layer (work in batches if needed).
Cook for 5-6 minutes per side, until golden brown and cooked through (internal temperature of 160°F).
Transfer to a paper towel-lined plate to drain excess fat. Serve hot.
