Ingredients
1 lb pizza dough, store-bought or homemade
1/2 lb breakfast sausage, casings removed
6 large eggs
2 tbsp milk
1/2 tsp salt
1/4 tsp black pepper
1 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
2 tbsp grated Parmesan cheese
2 tbsp chopped fresh chives (optional)
Instructions
Preheat oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating.
On a lightly floured surface, stretch or roll pizza dough into a 12-inch round. Transfer to a floured pizza peel or parchment-lined baking sheet.
In a skillet over medium heat, cook sausage, breaking it into crumbles, until browned and cooked through, about 5-7 minutes. Remove with a slotted spoon and set aside.
In a bowl, whisk eggs, milk, salt, and pepper. Pour off all but 1 tbsp of fat from the skillet. Return skillet to medium-low heat, add egg mixture, and cook, stirring gently, until soft curds form but eggs are still moist, about 2-3 minutes. Remove from heat.
Spread scrambled eggs evenly over pizza dough, leaving a 1-inch border. Top with cooked sausage, then sprinkle mozzarella, cheddar, and Parmesan cheeses.
Carefully slide pizza onto preheated stone or bake on baking sheet. Bake until crust is golden and cheese is bubbly, 12-15 minutes.
Remove from oven, let cool 2 minutes, then sprinkle with chives if using. Slice and serve.
Tips
To save time, use pre-cooked sausage crumbles.
Store leftovers in the refrigerator for up to 2 days; reheat in a 350°F oven.
Feel free to add other toppings like sautéed mushrooms, bell peppers, or onions.
