Ingredients
1 lb pizza dough, store-bought or homemade
1/2 lb breakfast sausage, casings removed
4 large eggs
1 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
1/2 cup pizza sauce or tomato sauce
2 tbsp olive oil
Salt and pepper to taste
2 tbsp chopped fresh parsley for garnish
Instructions
Preheat oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating.
In a skillet over medium heat, cook the sausage, breaking it into crumbles, until browned and cooked through, about 5-7 minutes. Drain excess fat and set aside.
On a floured surface, stretch or roll the pizza dough into a 12-inch circle. Transfer to a parchment-lined baking sheet or a floured pizza peel if using a stone.
Brush the dough with olive oil, then spread pizza sauce evenly over the surface, leaving a 1-inch border.
Sprinkle mozzarella and cheddar cheeses over the sauce, then top with the cooked sausage.
Carefully crack the eggs onto the pizza, spacing them evenly. Season with salt and pepper.
Bake for 12-15 minutes, or until the crust is golden and the eggs are set to your liking (whites firm, yolks still runny if desired).
Remove from oven, sprinkle with Parmesan and parsley. Let cool for 2 minutes, then slice and serve.
Tips
For a crispier crust, pre-bake the dough for 5 minutes before adding toppings.
If you prefer firmer yolks, bake for an additional 2-3 minutes.
Leftover pizza can be stored in the refrigerator and reheated in a toaster oven.
