Ingredients
1 lb pizza dough, store-bought or homemade
6 slices bacon, chopped
1/2 lb breakfast sausage, casings removed
6 large eggs
1/4 cup milk
1 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
2 tbsp olive oil
Salt and pepper to taste
2 tbsp chopped fresh chives for garnish
Instructions
Preheat oven to 450°F (230°C). If using a pizza stone, place it in the oven while preheating.
In a large skillet over medium heat, cook bacon until crispy. Remove with a slotted spoon and drain on paper towels. Pour off most of the fat, leaving about 1 tablespoon.
Add sausage to the same skillet and cook, breaking it up with a spoon, until browned and cooked through. Remove and drain on paper towels.
In a bowl, whisk eggs with milk, salt, and pepper. In the same skillet (wipe clean if needed), scramble eggs over medium-low heat until just set but still soft. Remove from heat.
On a floured surface, roll or stretch pizza dough into a 12-inch round. Transfer to a parchment-lined baking sheet or a floured pizza peel if using a stone.
Brush dough with olive oil. Spread scrambled eggs evenly over the dough, leaving a 1-inch border. Top with cooked bacon and sausage. Sprinkle with mozzarella, cheddar, and Parmesan.
Bake for 12-15 minutes, until crust is golden and cheese is bubbly. Garnish with chives, slice, and serve warm.
Tips
For a crisper crust, pre-bake the dough for 5 minutes before adding toppings.
You can substitute turkey bacon or chicken sausage for a lighter version.
