Ingredients
8 large eggs
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
8 ounces Italian sausage, casings removed
1/2 cup diced onion
1/2 cup diced red bell pepper
1/2 cup shredded cheddar cheese
Instructions
Preheat oven to 375°F (190°C).
In a medium bowl, whisk together eggs, milk, salt, and pepper until well combined. Set aside.
Heat olive oil in a 9-inch oven-safe skillet over medium heat. Add sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5 minutes.
Add onion and bell pepper to the skillet; cook, stirring occasionally, until softened, about 3 minutes.
Spread the sausage and vegetables evenly in the skillet. Pour the egg mixture over the top. Sprinkle with shredded cheese.
Cook on the stovetop without stirring for 2-3 minutes, until edges begin to set.
Transfer the skillet to the preheated oven and bake for 15-18 minutes, until the frittata is puffed and set in the center.
Let cool for 2 minutes, then slice into wedges and serve.
