4 large eggs
2 tablespoons milk

1/8 teaspoon black pepper
1 tablespoon butter
1/4 cup shredded cheddar cheese
1/4 cup diced bell pepper
1/4 cup diced onion
1/4 cup chopped fresh spinach
Instructions
In a medium bowl, whisk together eggs, milk, salt, and pepper until well combined.
Heat butter in a non-stick skillet over medium heat. Add bell pepper and onion; cook until softened, about 2 minutes. Add spinach and cook until wilted, about 1 minute.
For omelet: Pour egg mixture over vegetables. Cook without stirring until edges are set, about 3 minutes. Sprinkle cheese on one half, then fold the other half over. Cook 1 more minute, then slide onto plate.
For frittata: Pour egg mixture over vegetables. Cook without stirring until edges are set, about 4 minutes. Transfer skillet to preheated broiler and broil until top is golden and puffed, about 2 minutes. Cut into wedges and serve.
