Ingredients
1 lb breakfast sausage
1 tbsp butter
1 small onion, diced
1 bell pepper, diced
3 cups frozen hash browns, thawed
8 large eggs
1 cup milk
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
2 cups shredded cheddar cheese
Instructions
Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
In a large skillet over medium heat, cook sausage until browned, breaking it up. Remove with a slotted spoon and set aside.
In the same skillet, melt butter and sauté onion and bell pepper until softened, about 5 minutes.
Spread hash browns evenly in the prepared baking dish. Top with cooked sausage, then the sautéed vegetables.
In a bowl, whisk together eggs, milk, salt, pepper, and garlic powder. Pour over the hash brown mixture.
Sprinkle shredded cheese evenly on top.
Bake for 40-45 minutes, until eggs are set and top is golden. Let rest 5 minutes before serving.
Tips
For a vegetarian version, omit sausage and add sautéed mushrooms and spinach.
Can be assembled the night before and refrigerated; add 10 minutes to baking time if cold.
