8 large eggs
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons butter
8 slices bacon
1 cup shredded cheddar cheese
4 large flour tortillas (10-inch)
1/2 cup salsa
1/4 cup sour cream
1 avocado, sliced
Instructions
Cook bacon in a large skillet over medium heat until crispy, about 8 minutes. Transfer to paper towels to drain, then crumble.
In a bowl, whisk eggs, milk, salt, and pepper. Melt butter in the same skillet over medium heat, add egg mixture, and cook, stirring gently, until scrambled and set, about 3-4 minutes.
Warm tortillas in a dry skillet or microwave for 20 seconds each.
Divide scrambled eggs among tortillas, placing in the center. Top with crumbled bacon, cheese, salsa, sour cream, and avocado slices.
Fold in the sides of the tortilla, then roll up tightly from the bottom to form a burrito. Serve immediately.
Tips
For a vegetarian version, omit bacon and add black beans or sautéed vegetables.
