Ingredients
8 large eggs
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons butter
8 slices bacon
1 cup shredded cheddar cheese
4 large flour tortillas (10-inch) or 8 corn tortillas
1 cup prepared salsa
1/2 cup sour cream (optional)
1 avocado, sliced (optional)
Instructions
Cook bacon in a large skillet over medium heat until crispy, about 6-8 minutes. Transfer to paper towels to drain, then crumble.
While bacon cooks, whisk eggs, milk, salt, and pepper in a bowl until well combined.
Pour off all but 1 tablespoon bacon drippings from skillet (or use butter). Reduce heat to medium-low and add egg mixture. Cook, stirring gently, until eggs are just set but still moist, about 3-4 minutes. Remove from heat.
Warm tortillas: For flour tortillas, heat in a dry skillet or microwave for 20 seconds. For corn tortillas, heat in a skillet until pliable.
Assemble: Place a warm tortilla on a plate. Spoon 1/4 of the scrambled eggs down the center. Top with crumbled bacon, cheese, salsa, and optional sour cream and avocado.
For burritos: Fold in sides, then roll up tightly. For tacos: Fold tortilla in half over filling.
Serve immediately.
