8 large eggs
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons butter
8 slices bacon
4 large flour tortillas (10-inch)
1 cup shredded cheddar cheese
1/2 cup salsa
1/2 cup sour cream (optional)
Instructions
Cook bacon in a large skillet over medium heat until crispy, about 8 minutes. Transfer to paper towels to drain, then crumble.
In a bowl, whisk eggs, milk, salt, and pepper. In the same skillet, melt butter over medium heat. Pour in egg mixture and cook, stirring gently, until soft scrambled, about 3-4 minutes. Remove from heat.
Warm tortillas in a dry skillet or microwave for about 20 seconds each until pliable.
Divide scrambled eggs among tortillas, placing in the center. Top with crumbled bacon, cheese, salsa, and sour cream if using.
Fold in the sides of the tortilla, then roll up tightly from the bottom to form a burrito. Serve immediately.
