Ingredients
1 lb breakfast sausage (bulk or links, casings removed)
8 large eggs
1/4 cup milk
Salt and black pepper to taste
4 large flour tortillas (10-inch)
1 cup shredded cheddar or Monterey Jack cheese
1 cup prepared salsa (store-bought or homemade)
Optional: sour cream, avocado, hot sauce for serving
Instructions
Cook the sausage in a large skillet over medium-high heat, breaking it into crumbles, until browned and cooked through, about 5-7 minutes. Transfer to a plate and drain excess fat.
In a bowl, whisk eggs with milk, salt, and pepper. Reduce heat to medium-low and scramble the eggs in the same skillet until just set, about 3-4 minutes. Remove from heat.
Warm tortillas in a dry skillet or microwave until pliable. Place one tortilla on a work surface. Spoon a quarter of the scrambled eggs down the center, top with a quarter of the sausage, 1/4 cup cheese, and 2 tablespoons salsa.
Fold the sides of the tortilla over the filling, then roll up tightly from the bottom to form a burrito. Repeat with remaining ingredients.
Optional: Heat a clean skillet over medium heat and lightly toast each burrito seam-side down for 1-2 minutes until golden. Serve immediately with extra salsa, sour cream, avocado, or hot sauce.
