Ingredients
4 large eggs
2 tablespoons milk
Salt and pepper to taste
1 tablespoon butter
1/2 cup shredded cheddar cheese
2 large flour tortillas (10-inch)
1/2 cup cooked breakfast sausage or bacon, crumbled
1/2 cup frozen hash browns, cooked according to package
1/4 cup salsa
2 tablespoons sour cream
Instructions
In a bowl, whisk together eggs, milk, salt, and pepper until well combined.
Melt butter in a non-stick skillet over medium heat. Pour in egg mixture and cook, stirring gently, until eggs are set but still moist, about 3-4 minutes. Remove from heat.
Warm tortillas in a dry skillet or microwave for about 20 seconds until pliable.
Divide scrambled eggs evenly between tortillas, placing in the center. Top each with cheese, cooked sausage or bacon, hash browns, salsa, and sour cream.
Fold in the sides of each tortilla, then roll up tightly from the bottom to enclose the filling.
Serve immediately, or optionally crisp the burritos in a skillet over medium heat for 1-2 minutes per side.
Tips
For a vegetarian version, omit meat and add black beans or sautéed vegetables.
To make ahead, wrap burritos in foil and refrigerate; reheat in a toaster oven or microwave.
