Ingredients
4 large eggs
2 tablespoons milk
Salt and pepper to taste
2 tablespoons unsalted butter
4 slices bacon
1/2 cup shredded cheddar cheese
1/2 avocado, sliced
2 large flour tortillas (10-inch)
Salsa and sour cream for serving (optional)
Instructions
Cook bacon in a skillet over medium heat until crispy, about 5-7 minutes. Transfer to paper towels to drain, then crumble.
In a bowl, whisk eggs with milk, salt, and pepper. Melt butter in a non-stick skillet over medium heat. Pour in eggs and cook, stirring gently, until just set, about 2-3 minutes. Remove from heat.
Warm tortillas in a dry skillet or microwave for about 10 seconds each to make them pliable.
Divide scrambled eggs among tortillas, placing in the center. Top with crumbled bacon, shredded cheese, and avocado slices.
Fold the sides of the tortilla over the filling, then roll tightly from the bottom to form a burrito.
Optional: Heat a clean skillet over medium heat and toast the burritos seam-side down for 1-2 minutes until golden and cheese melts. Serve with salsa and sour cream.
Tips
For extra flavor, add a spoonful of pico de gallo or hot sauce inside the burrito.
To make ahead, wrap burritos in foil and refrigerate; reheat in a toaster oven or skillet.
Substitute bacon with sausage or ham if preferred.
