Ingredients
4 large flour tortillas (10-inch)
8 large eggs
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon butter
1 can (15 oz) black beans, drained and rinsed
1/2 teaspoon ground cumin
1 cup shredded cheddar or Monterey Jack cheese
1/2 cup salsa
1/4 cup chopped fresh cilantro (optional)
Sour cream and extra salsa for serving
Instructions
In a medium bowl, whisk together eggs, milk, salt, and pepper until well combined.
Melt butter in a large nonstick skillet over medium heat. Pour in egg mixture and cook, stirring gently, until scrambled and just set, about 3-4 minutes. Remove from heat.
In a small saucepan, combine black beans and cumin. Cook over medium heat, stirring occasionally, until heated through, about 3 minutes.
Warm tortillas in a dry skillet or microwave until pliable.
To assemble: Place a tortilla on a plate. Spoon about 1/4 of the scrambled eggs down the center. Top with 1/4 of the black beans, 1/4 cup cheese, 2 tablespoons salsa, and cilantro if using.
Fold the sides of the tortilla over the filling, then roll up tightly from the bottom to form a burrito. Repeat with remaining tortillas.
Serve immediately with sour cream and extra salsa on the side.
Tips
For a spicier burrito, add a diced jalapeño to the eggs while scrambling.
To make ahead, wrap burritos in foil and refrigerate. Reheat in a 350°F oven for 15 minutes.
Substitute pinto beans or refried beans for black beans if desired.
