Ingredients
1 large buttermilk biscuit (store-bought or homemade)
1 large egg
1 slice cheddar cheese
1 tablespoon unsalted butter
Salt and black pepper to taste
Instructions
Split the biscuit in half horizontally and toast lightly in a toaster or under a broiler until golden.
In a small nonstick skillet, melt butter over medium heat. Crack the egg into the skillet and cook until the white is set but the yolk is still runny, about 3 minutes. Season with salt and pepper.
Place the cheese slice on the bottom half of the biscuit. Top with the fried egg, then cover with the top half of the biscuit.
Serve immediately.
Tips
For a firmer yolk, cook the egg for 4-5 minutes or flip and cook an additional minute.
Add a slice of cooked bacon or sausage for extra protein.
Wrap the sandwich in foil for a portable breakfast on the go.
