Ingredients
8 oz fresh mozzarella cheese, cut into 16 rounds (about 1/2-inch thick)
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup Italian-style breadcrumbs
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder
1/2 tsp dried oregano
Vegetable oil, for frying
Instructions
Pat mozzarella rounds dry with paper towels to remove excess moisture.
Set up a breading station: In a shallow bowl, place flour. In another bowl, beat eggs. In a third bowl, combine breadcrumbs, salt, pepper, garlic powder, and oregano.
Dredge each mozzarella round in flour, shaking off excess. Dip into egg, letting excess drip off, then coat with breadcrumb mixture, pressing gently to adhere. Place on a plate.
Heat about 1/2 inch of oil in a large skillet over medium-high heat until shimmering (350°F/175°C).
Fry medallions in batches, without crowding, for about 1-2 minutes per side, until golden brown and cheese is just melted.
Transfer to a paper towel-lined plate. Serve immediately with marinara sauce.
Tips
For extra crispiness, double bread: after first breading, dip again in egg and breadcrumbs.
Chill breaded medallions for 15 minutes before frying to prevent cheese from leaking.
Leftover medallions can be reheated in an air fryer at 375°F for 3-4 minutes.
