Ingredients
4 fresh bratwurst sausages
1 tablespoon vegetable oil
1 large onion, thinly sliced
1 cup beer (lager or ale)
4 crusty hoagie or bratwurst rolls
4 tablespoons German mustard
1 cup sauerkraut, drained and warmed
Instructions
Prick bratwursts with a fork to prevent bursting. Heat oil in a large skillet over medium heat. Add sausages and cook, turning occasionally, until browned on all sides, about 5 minutes. Transfer to a plate.
Add sliced onion to the skillet and cook, stirring, until softened and lightly browned, about 5 minutes. Pour in beer and bring to a simmer, scraping up any browned bits.
Return sausages to the skillet. Reduce heat to low, cover, and simmer until sausages are cooked through and flavors meld, about 15 minutes.
Meanwhile, warm the rolls in a 350°F oven for 5 minutes. Split rolls open but not all the way through.
Place a bratwurst in each roll. Top with onions from the skillet, a generous spread of mustard, and a spoonful of sauerkraut.
Tips
For extra flavor, use a dark beer like a bock or dunkel.
