Ingredients
1 1/2 cups wheat bran
1 cup buttermilk
1/3 cup vegetable oil
1 large egg
2/3 cup packed brown sugar
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup raisins
Instructions
Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners.
In a small bowl, combine wheat bran and buttermilk. Let stand for 10 minutes.
In a large bowl, whisk together oil, egg, brown sugar, and vanilla extract. Stir in bran mixture.
In another bowl, whisk together flour, baking soda, baking powder, and salt. Add to wet ingredients and stir just until combined. Fold in raisins.
Divide batter evenly among prepared muffin cups, filling each about 3/4 full.
