Ingredients
1 medium head red cabbage (about 2 lbs), cored and thinly sliced
2 tablespoons butter or vegetable oil
1 medium onion, diced
1 medium apple, peeled, cored, and diced
3 tablespoons red wine vinegar
2 tablespoons brown sugar
1/2 cup chicken or vegetable broth
1 bay leaf
3 whole cloves
Salt and freshly ground black pepper to taste
Instructions
In a large pot or Dutch oven, melt butter over medium heat. Add onion and cook until softened, about 5 minutes.
Add apple and cook for 2 minutes more.
Add shredded cabbage, vinegar, brown sugar, broth, bay leaf, and cloves. Stir to combine.
Bring to a simmer, then reduce heat to low, cover, and cook for 45-60 minutes, stirring occasionally, until cabbage is very tender.
Remove bay leaf and cloves. Season with salt and pepper. Serve hot or warm.
Tips
For a richer flavor, substitute bacon fat for butter.
Can be made a day ahead; reheat gently before serving.
