This Italian side dish transforms bitter radicchio into a sweet, savory delight by braising it with crispy pancetta or prosciutto in a rich broth.

Ingredients
2 heads radicchio (about 12 oz each), quartered lengthwise
4 oz pancetta or prosciutto, diced
2 tbsp olive oil
1/2 cup chicken or vegetable broth
1 tbsp balsamic vinegar
Salt and freshly ground black pepper to taste
1 tbsp chopped fresh parsley (optional)
Instructions
Heat olive oil in a large skillet over medium heat. Add pancetta or prosciutto and cook until crispy, about 3-4 minutes. Remove with a slotted spoon and set aside.
Add radicchio quarters to the skillet, cut side down. Cook without moving for 2-3 minutes until lightly browned.
Flip radicchio and add broth and balsamic vinegar. Bring to a simmer, then reduce heat to low, cover, and braise for 10-12 minutes until radicchio is tender.
Uncover, increase heat to medium-high, and cook until liquid reduces slightly, about 2 minutes.
Season with salt and pepper to taste. Sprinkle with reserved pancetta/prosciutto and parsley if using. Serve warm.
