Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 pound smoked turkey leg or wing
- 8 cups chopped mixed greens (collard, mustard, turnip)
- 4 cups chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 tablespoon apple cider vinegar
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook 1 minute more.
- Add smoked turkey and chopped greens. Pour in chicken broth, salt, pepper, and red pepper flakes if using. Bring to a boil.
- Reduce heat to low, cover, and simmer for 45-60 minutes, until greens are tender and turkey is falling off the bone.
- Remove turkey from pot. Let cool slightly, then shred meat, discarding bones and skin. Return shredded turkey to pot.
- Stir in apple cider vinegar. Taste and adjust seasoning. Serve hot.

- For a thicker potlikker, simmer uncovered for the last 15 minutes.
