Ingredients
1 loaf (about 1 lb) day-old French bread, cut into 1-inch cubes
4 large eggs
2 cups whole milk
1 cup heavy cream
3/4 cup granulated sugar
1/4 cup packed light brown sugar
1/4 cup bourbon
2 teaspoons vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/2 cup unsalted butter
1 cup packed light brown sugar
1/2 cup heavy cream
1/4 cup bourbon
1 cup chopped pecans
Instructions
Preheat oven to 350°F. Grease a 9x13-inch baking dish.
Place bread cubes in the prepared dish. In a large bowl, whisk together eggs, milk, 1 cup cream, granulated sugar, 1/4 cup brown sugar, 1/4 cup bourbon, vanilla, cinnamon, nutmeg, and salt. Pour over bread, pressing gently to soak. Let stand 15 minutes.
Bake for 40-45 minutes, until set and golden. Let cool slightly.
Meanwhile, make praline sauce: In a saucepan, melt butter over medium heat. Stir in 1 cup brown sugar and 1/2 cup cream; bring to a boil, stirring constantly. Reduce heat and simmer 3 minutes. Remove from heat; stir in 1/4 cup bourbon and pecans.
Serve bread pudding warm, drizzled with praline sauce.
Tips
Use day-old bread for better texture; stale bread absorbs custard without becoming mushy.
Sauce can be made ahead and reheated gently.
Store leftovers covered in the refrigerator for up to 3 days.
