Ingredients
1 large head cauliflower, cut into florets
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup bourbon
1/4 cup honey
2 tablespoons soy sauce
2 tablespoons ketchup
1 tablespoon apple cider vinegar
1 clove garlic, minced
1 teaspoon cornstarch mixed with 1 tablespoon water (slurry)
Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a large bowl, toss cauliflower florets with olive oil, salt, and pepper. Spread in a single layer on the baking sheet. Roast for 20-25 minutes, until tender and lightly browned.
Meanwhile, in a small saucepan, combine bourbon, honey, soy sauce, ketchup, apple cider vinegar, and garlic. Bring to a simmer over medium heat.
Stir in the cornstarch slurry and cook, stirring constantly, until the glaze thickens, about 1-2 minutes. Remove from heat.
Once cauliflower is roasted, transfer to a large bowl and pour the bourbon glaze over it. Toss to coat evenly.
Return glazed cauliflower to the baking sheet and spread in a single layer. Broil on high for 2-3 minutes, watching carefully, until glaze is caramelized and bubbly.
Serve immediately, garnished with sliced green onions or sesame seeds if desired.
Tips
For extra heat, add a pinch of cayenne pepper to the glaze.
