Instructions
Make the dough: In a small bowl, combine warm milk and yeast; let stand 5 minutes until foamy. In a large bowl, whisk together sugar, eggs, melted butter, vanilla, and salt. Add yeast mixture and stir. Gradually add flour, mixing until a soft dough forms. Turn onto a floured surface and knead 5-7 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place until doubled, about 1 hour.
Make the pastry cream: In a saucepan, heat milk and sugar over medium heat until steaming. In a bowl, whisk egg yolks, cornstarch, and salt. Gradually whisk in hot milk mixture. Return to saucepan and cook over medium heat, whisking constantly, until thickened (about 2 minutes). Remove from heat; stir in butter and vanilla. Transfer to a bowl, cover surface with plastic wrap, and refrigerate until cold.
Shape and fry doughnuts: Punch down dough and roll out on a floured surface to 1/2-inch thickness. Cut with a 3-inch round cutter. Place on parchment-lined baking sheets, cover, and let rise until puffy, about 30 minutes. Heat 2 inches oil to 350°F in a deep pot. Fry doughnuts 1-2 minutes per side until golden brown. Drain on paper towels. Cool completely.
Make the glaze: In a small saucepan, heat cream until simmering. Pour over chopped chocolate in a bowl; let stand 1 minute. Add butter and corn syrup; stir until smooth. Let cool slightly until thick but pourable.
Assemble: Using a piping bag fitted with a small tip, inject pastry cream into the side of each doughnut. Dip tops into chocolate glaze, allowing excess to drip off. Let set on a wire rack.
