Ingredients
1 cup fruit juice (e.g., raspberry, orange, or grape)
1/4 cup granulated sugar
3 tablespoons unflavored gelatin powder
1/4 cup cold water
1/4 cup vodka, rum, or bourbon (or to taste)
1 tablespoon lemon juice (optional, for tartness)
Food coloring (optional)
Instructions
In a small bowl, sprinkle gelatin over cold water and let sit for 5 minutes to bloom.
In a small saucepan, combine fruit juice and sugar. Heat over medium, stirring until sugar dissolves. Do not boil.
Remove from heat and whisk in bloomed gelatin until completely dissolved.
Stir in alcohol and lemon juice (if using). Add food coloring if desired.
Pour mixture into silicone molds or a greased 8x8-inch dish. Refrigerate for at least 2 hours until firm.
If using a dish, cut into squares with a sharp knife. Remove from molds or dish and serve.
Tips
For stronger flavor, use a flavored liquor like raspberry vodka or spiced rum.
Store gummies in an airtight container in the refrigerator for up to 2 weeks.
To unmold easily, freeze for 10 minutes before popping out.
Adjust alcohol amount to taste; too much may prevent setting.
