Ingredients
2 slices white bread
2 slices bologna (about 1/4 inch thick each)
1 tablespoon butter, softened
1 teaspoon yellow mustard
1 tablespoon mayonnaise
1 slice American cheese (optional)
2 leaves iceberg lettuce
2 slices tomato
Instructions
Spread butter on one side of each bread slice.
Heat a skillet over medium heat. Place bologna slices in the skillet and cook for 2-3 minutes per side until browned and slightly crispy.
While bologna cooks, spread mayonnaise on the unbuttered side of one bread slice and mustard on the unbuttered side of the other.
Assemble the sandwich: place lettuce on the mayonnaise side, then tomato slices, then fried bologna, then cheese if using. Top with the mustard-spread bread slice, buttered side up.
Place the sandwich in the skillet and cook for 2-3 minutes per side until bread is golden brown and cheese is melted.
Tips
For extra flavor, add a few pickle slices or a sprinkle of black pepper.
Serve with potato chips and a pickle spear for a classic lunch.
If you prefer a cold sandwich, skip the frying step and use bologna straight from the package.
