Ingredients
2 pounds potatoes, peeled and thinly sliced
1 pound bologna, sliced
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
1 cup shredded cheddar cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika
Instructions
Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
Layer half of the potato slices in the bottom of the dish, then top with half of the bologna slices. Repeat layers.
In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Gradually whisk in milk, then bring to a simmer, stirring constantly until thickened, about 3-4 minutes.
Remove from heat and stir in cheddar cheese, salt, pepper, and paprika until cheese is melted and smooth.
Pour the cheese sauce evenly over the casserole layers.
Cover with foil and bake for 40 minutes. Remove foil and bake for an additional 20 minutes, or until potatoes are tender and top is golden brown.
Let rest for 5 minutes before serving.
Tips
For extra flavor, add a layer of sautéed onions between the bologna and potatoes.
