Ingredients
2 slices white bread
1 tablespoon butter, softened
2 slices bologna (about 1/4 inch thick)
1 large egg
Salt and black pepper to taste
1 slice American cheese (optional)
Ketchup or hot sauce for serving (optional)
Instructions
Butter one side of each bread slice. Place a skillet over medium heat and toast the bread, buttered side down, until golden brown, about 2 minutes per side. Set aside.
In the same skillet, add the bologna slices in a single layer. Cook until lightly browned and edges curl, about 1-2 minutes per side. Remove and set aside.
Reduce heat to medium-low. Crack the egg into the skillet and cook until the white is set but yolk is still runny, about 3 minutes. Season with salt and pepper. For a firmer yolk, flip and cook 30 seconds more.
Assemble the sandwich: Place one slice of toast, buttered side up. Layer with a slice of cheese (if using), then the bologna, then the fried egg. Top with the second slice of toast, buttered side down.
