1/2 cup granulated sugar
1/4 teaspoon salt
1/2 cup cold unsalted butter, cubed
1 large egg yolk
1 tablespoon cold water
3 cups fresh or frozen blueberries
1/2 cup granulated sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
1/2 teaspoon lemon zest
1/2 cup all-purpose flour
1/4 cup packed brown sugar
1/4 cup cold unsalted butter, cubed
Instructions
Preheat oven to 375°F (190°C). Line a 9x9-inch baking pan with parchment paper, leaving overhang on two sides.
Make the crust: In a medium bowl, whisk together 1 1/2 cups flour, 1/2 cup granulated sugar, and salt. Cut in 1/2 cup cold butter using a pastry blender or your fingers until mixture resembles coarse crumbs. Add egg yolk and cold water; stir until dough comes together. Press evenly into the bottom of the prepared pan.
Bake crust for 15 minutes, until lightly golden. Remove from oven and let cool slightly.
Make the filling: In a medium saucepan, combine blueberries, 1/2 cup granulated sugar, cornstarch, lemon juice, and lemon zest. Cook over medium heat, stirring constantly, until mixture thickens and comes to a boil, about 5-7 minutes. Remove from heat.
Make the streusel: In a small bowl, combine 1/2 cup flour and brown sugar. Cut in 1/4 cup cold butter until mixture resembles coarse crumbs.
Pour the blueberry filling over the baked crust and spread evenly. Sprinkle streusel over the filling.
Bake for 25-30 minutes, until streusel is golden and filling is bubbly. Let cool completely in the pan on a wire rack.
Once cool, lift bars out using parchment overhang and cut into squares.
Tips
For cleaner cuts, chill the bars for 30 minutes before slicing.
Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
If using frozen blueberries, do not thaw them first.
