Ingredients
1/2 cup unsalted butter
1 cup all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon salt
3/4 cup milk
4 cups fresh or frozen blueberries
1/2 cup granulated sugar (for berries)
1 tablespoon lemon juice
1 teaspoon vanilla extract
Instructions
Preheat oven to 375°F (190°C). Place butter in a 9x13-inch baking dish and put in oven to melt.
In a medium bowl, whisk together flour, 1 cup sugar, baking powder, and salt. Stir in milk until just combined; set aside.
In a separate bowl, toss blueberries with 1/2 cup sugar, lemon juice, and vanilla extract.
Remove baking dish from oven once butter is melted. Pour batter over the melted butter without stirring.
Spoon blueberry mixture evenly over the batter. Do not stir.
Bake for 40-45 minutes, until the top is golden brown and the berries are bubbly. Let cool for 10 minutes before serving.
Tips
Serve warm with vanilla ice cream or whipped cream.
If using frozen blueberries, do not thaw them first.
Store leftovers covered in the refrigerator for up to 3 days.
