Ingredients
4 boneless, skinless chicken breasts (about 6 oz each)
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
8 slices thick-cut bacon
8 slices sourdough bread
4 leaves green leaf lettuce
1 large tomato, sliced into 8 rounds
1/4 cup mayonnaise
Instructions
Preheat a grill or grill pan to medium-high heat.
Brush chicken breasts with olive oil and season with salt and pepper. Grill for 5-6 minutes per side, or until internal temperature reaches 165°F. Let rest for 5 minutes, then slice into strips.
Meanwhile, cook bacon in a skillet over medium heat until crispy. Drain on paper towels.
Toast bread slices until golden. Spread mayonnaise on one side of each slice.
Assemble sandwiches: on 4 bread slices, layer lettuce, tomato slices, bacon, and chicken strips. Top with remaining bread slices, mayo-side down.
Cut sandwiches in half and serve immediately.
