Ingredients
12 slices bacon
6 slices white or sourdough bread
3 tablespoons mayonnaise
4 leaves iceberg or romaine lettuce
1 large tomato, sliced into 8 thin rounds
Salt and freshly ground black pepper to taste
Instructions
Cook bacon in a large skillet over medium heat until crispy, about 8 minutes, turning once. Drain on paper towels.
Toast bread slices until golden. Spread one side of each slice with mayonnaise.
On a plate, layer 3 slices of bread, mayonnaise-side up. On the first slice, add 2 lettuce leaves, 4 tomato slices, and 4 bacon slices. Season with salt and pepper. Top with a second bread slice, mayonnaise-side up. Repeat layering with remaining lettuce, tomato, and bacon. Finish with the third bread slice, mayonnaise-side down.
Secure each sandwich with toothpicks and cut diagonally into quarters. Serve immediately.
Tips
For extra flavor, add a slice of cheddar or Swiss cheese between the bacon layers.
To prevent sogginess, pat tomato slices dry with paper towels before assembling.
Sandwiches can be wrapped and refrigerated for up to 4 hours, but are best served fresh.
