Ingredients
2 cups whole milk
1/2 cup heavy cream
1/2 cup granulated sugar
1/4 cup cornstarch
1 teaspoon almond extract
1/4 teaspoon salt
Sliced almonds or fresh berries for garnish (optional)
Instructions
In a medium saucepan, whisk together the milk, cream, sugar, cornstarch, and salt until smooth.
Place the saucepan over medium heat and cook, stirring constantly with a whisk, until the mixture thickens and comes to a gentle boil, about 5-7 minutes.
Once boiling, continue to cook for 1 minute, stirring constantly, then remove from heat.
Stir in the almond extract.
Pour the mixture into four individual serving dishes or a single large dish.
Let cool to room temperature, then cover and refrigerate for at least 4 hours or until set.
Garnish with sliced almonds or fresh berries before serving, if desired.
Tips
For a smoother texture, strain the mixture through a fine-mesh sieve before pouring into dishes.
Blancmange can be made up to 2 days ahead and stored covered in the refrigerator.
