Ingredients
2 cups fresh blackberries (about 10 oz)
1/4 cup granulated sugar
1 tablespoon lemon juice
1 cup heavy cream
2 tablespoons powdered sugar
1/2 teaspoon vanilla extract
1/2 cup crushed meringue cookies (or store-bought meringues)
Instructions
In a medium bowl, combine blackberries, granulated sugar, and lemon juice. Mash with a fork until saucy but still chunky. Set aside.
In a large bowl, whip heavy cream, powdered sugar, and vanilla extract until soft peaks form.
Gently fold half of the blackberry mixture into the whipped cream until just combined, creating a marbled effect.
Layer the fool in serving glasses: spoon a dollop of the cream mixture, then a layer of crushed meringues, then a spoonful of remaining blackberry mixture. Repeat layers until glasses are full.
Chill for at least 30 minutes before serving. Garnish with a few fresh blackberries and a sprinkle of crushed meringue if desired.
Tips
For a smoother texture, you can strain the blackberry mixture to remove seeds.
Store leftovers in the refrigerator for up to 1 day; the meringues may soften slightly.
Substitute frozen blackberries (thawed) if fresh are not available.
