6 cups fresh or frozen blackberries
1 cup granulated sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup granulated sugar (for topping)
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, cold and cubed
1/2 cup boiling water
Instructions
Preheat oven to 375°F (190°C).
In a large bowl, combine blackberries, 1 cup sugar, cornstarch, lemon juice, and vanilla. Stir gently and pour into a 9x13-inch baking dish.
In a separate bowl, whisk together flour, 1/2 cup sugar, baking powder, and salt. Cut in cold butter using a pastry blender or fingers until mixture resembles coarse crumbs.
Sprinkle flour mixture evenly over the blackberries. Pour boiling water over the topping (do not stir).
Bake for 35-40 minutes until topping is golden and filling is bubbly. Let cool for 10 minutes before serving.
