Ingredients 1 can (15 oz) black beans, drained and rinsed 1/2 cup breadcrumbs 1/4 cup finely chopped onion 1 clove garlic, minced 1 large egg 1/2 teaspoon ground cumin 1/2 teaspoon salt 1/4 teaspoon black pepper 1 cup shredded cheddar cheese 12 slider buns 2 tablespoons butter, melted Optional toppings: lettuce, tomato, pickles, ketchup, mustard
Instructions Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper. In a large bowl, mash black beans with a fork until mostly smooth but with some chunks. Add breadcrumbs, onion, garlic, egg, cumin, salt, pepper, and 1/2 cup of the cheddar cheese. Mix until well combined. Form the mixture into 12 small patties, about 2 inches in diameter. Place patties on the prepared baking sheet. Bake for 10 minutes. Remove from oven, top each patty with remaining cheese, and return to oven for 2 minutes until cheese melts. While patties bake, split slider buns and brush cut sides with melted butter. Toast in a separate pan or under broiler until golden. Assemble sliders: place a patty on each bun bottom, add desired toppings, and cover with bun top. Serve warm.
Tips For a vegan version, omit the egg and cheese, and use a flax egg (1 tbsp ground flaxseed + 3 tbsp water) and vegan cheese. These sliders can be made ahead and reheated in the oven at 350°F for 5-7 minutes. Serve with sweet potato fries or a side salad.
