Ingredients
1 (15-ounce) can black beans, rinsed and drained
3 large eggs
1/3 cup melted coconut oil or vegetable oil
1/2 cup cocoa powder
1/2 cup granulated sugar
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup semisweet chocolate chips (optional)
Instructions
Preheat oven to 350°F (175°C). Grease an 8x8-inch baking pan or line with parchment paper.
In a food processor or blender, combine black beans, eggs, oil, cocoa powder, sugar, vanilla, baking powder, and salt. Blend until completely smooth, scraping down sides as needed.
If using, stir in chocolate chips by hand.
Pour batter into prepared pan and spread evenly.
Bake for 20-25 minutes, until the top is set and a toothpick inserted in the center comes out with a few moist crumbs.
Let cool completely in the pan before cutting into 16 squares.
